Hello Liam,
as mentioned on our call today, i'm going to put you in touch with Orna who is one of the cyclists coming over from York at the end of the month to take part in the RAI.
She, along with Kirsty who also lives in York and is also going to be one of the 8 riders on the team, are going to work with you to discuss & decide what food we will "use" for the duration of the journey around Ireland - both for the active cyclists and also of course for the crew members.
Jessica is based here in Dublin, and she will be one of the Support Crew - she has volunteered to help out where she can, so i include here in this email and she can jump in / out as appropriate.
LIAM : i'm going to write this via email, but also refer you to a bulletin board we have been using of late for the ongoing RAI aspects. So it will probably be easier for you all to shift to using the Board/Forum to discuss and tease out any issues.

ORNA : Liam's mobile number is + 353 86 849 1322, and as far as i know he's off Night Duty now so he should be easier to reach than before. Can i ask you send him a text message with your own numbers and you set up a call with him. By all means use "my" telecon details if you want ... I'm hoping Liam will be on this Wednesday 19th conference call.
Input information:
8 riders, 6 crew (including Liam himself) travelling the whole journey with us. One vegetarian.
And probably 3-4 other short-term crew helping out at different parts around the country. We start on Sunday afternoon, and we expect to be finished (?) late on Wednesday night or maybe early Thursday morning ( to Navan).
Liam to confirm but the RV/Camper Van has both a hob and an oven that can be used. (Gas/electric?) And we should source a cheap microwave (no more powerful than 650-700w) to use off a generator Liam has for within the RV.
-> so we can perhaps bring some home made food with us for the start, maybe have some ready made meals needing just microwaving (be it Lidl/Aldi/whatever) and i'd imagine in some instances folk will simply pull in to a roadside cafe/restaurant and grab some hot food.
Cyclists in particular will likely be very hungry coming off their shift (day or night). We might need different food for 2300 hours versus 0700 versus 1500 when the shifts change over ?
If possible we should also consider suitable snacks/food for consumption during the active cycling 8-hour shift such that the riders and crew can eat whilst they are driving and whilst they are in the Leap-Frog car in between taking turns on their bike. Fruit ? (Energy) Bars ?
We're expecting to use plastic disposable cutlery - these will need to be sourced.
Is there a kettle in the RV that can be used for teas & coffees both in cups and also to go into flasks for the active folk.

Just some ideas --> up to you as to how you want to run with this ... but its really a vital part to the overall success of the team so its important that we nail this well.
Please push your thoughts on the Forum so us others can keep an eye, but its in your hands now. I'll ask Ciaran to confirm the initial budget put aside for grub.
